Happy Saint Nikolaus - with a German Weckmann!


Looks like they want to be upside-down!

Today is December 6th, 2012 Saint Nikolaus!

I'm used to celebrate this with a German Weckmann
The traditional Weckmann is a sweet bread roll shaped into a gingerbread man form with raisin eyes and a white clay pipe in his mouth. The Weckmann can be purchased in the majority of German bakeries in regions where Saint Nikolaus's Day is celebrated or can be made at home. Here's a recipe to make your own Weckmann.

Ingredients:

1 cup milk
1/3 cup sweet butter
3 tablespoon (1/6 cup) shortening
1 cup sugar
3 tablespoons real vanilla extract
1 grated lemon peel
1 bag rapid yeast (1/4 ounce)
3 tablespoon warm water
4 whole eggs
6 2/3 cups flour
1 egg beaten with 2 tablespoons water for glazing

Preparation:

Mix yeast with warm water and 1 tablespoon of sugar. Combine milk, butter, shortening, and sugar, in a saucepan and heat gently then set aside to cool. Place flour in a large bowl, make a well in the middle of the flour and pour yeast mixture into the well, cover and let rise for 20 minutes. Add milk mixture to flour and mix all the ingredients together. Knead into a ball, dust with flour and let rise for 45 minutes.
Roll dough and divide into 10 pieces to form into gingerbread men shaped Weckmänner. Place the Weckmänner on a large baking sheet covered with baking or wax paper, making sure to leave enough room between each shape. Let rise for a further 20 to 45 minutes.
Brush with egg and water mixture, decorate with raisins and dried cranberries for the eyes and buttons*
Bake at 325 to 350 degrees F for 10-15 minutes.

Angela Wuerz - Worlds Best Turkey Ever!


I posted this for Thanksgiving on another blog but I think it's a great recipe so I post it here as well!

Almost Turkey Day!

Are you all ready for Thanksgiving? To tell you the truth I'm not. I'm actually far from ready and decided to be lazy this year, just make beans, mashed potatoes and buy a chicken. This year it's about quality time as a family. Not about cooking all day!
However I wanted to share the best turkey recipe I've ever made with you!

Ingredients

1 (12 pound) whole turkey, neck and giblets removed, 1 tablespoon garlic powder, 1/2 cup butter, cubed, salt and pepper to taste, 2 apples, cored and halved, 2/3 (750 milliliter) bottle champagne.

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Rinse turkey, and pat dry. Gently loosen turkey breast skin, and insert pieces of butter between the skin and breast. Place apples inside the turkey's cavity. Sprinkle with garlic powder, salt, and pepper. Place turkey in a roasting bag, and pour champagne over the inside and outside of the bird. Close bag, and place turkey in a roasting pan.
  3. Bake turkey 3 to 3 1/2 hours in the preheated oven, or until the internal temperature is 180 degrees F (85 degrees C) when measured in the meatiest part of the thigh. Remove turkey from bag, and let stand for at least 20 minutes before carving.
It's so simple you won't even believe it. You can also add some garlic pieces, cut them in slices and after cutting a little hole in the skin put it under the skin. Cut up some celery, carrots and apples stuff it with them. Orange juice - I use fresh squeezed - adds a great flavor to it.

Great Brownies - even for Xmas


It doesn't need to be cookies - Great Brownies for Christmas

INGREDIENTS:
1/2 cup butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder

3 tablespoons butter, softened
3 tablespoons unsweetened cocoa
powder
1 tablespoon honey
1 teaspoon vanilla extract
1 cup confectioners' sugar




Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
  2. In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
  3. Bake in preheated oven for 25 to 30 minutes. Do not overcook.
  4. To Make Frosting: Combine 3 tablespoons butter, 3 tablespoons cocoa, 1 tablespoon honey, 1 teaspoon vanilla, and 1 cup confectioners' sugar. Frost brownies while they are still warm and decorate them with your favorite sprinkles!

Super Easy Slow Cooker Pulled Pork

Ingredients:

- 1(2pound) pork tenderloin
- 1 (12 fluid ounce) can or bottle root beer
- 1 (18 ounce) bottle of your favorite BBQ Sauce
- 8 hamburger buns, split and lightly toasted

Directions

Place the pork tenderloin in a slow cooker, pour the root beer oer the meat. Cover and cook on low until well cooked and the pork shreds easily, 6 to 7 hours. Note: the actual length of time may vary according to individual slow cooker. Drain well, Stir in BBQ sauce, serve over hamburger buns.

Angela Wuerz - My famous super simple Carrot-Cake without flour


Hello,
I just wanted to share my super famous Carrot-Cake with you:
You'll need:
5 eggs, 1.5 cups or 300 gr. sugar, 1.5 cups or 300 gr. shredded carrots, 1.5 cups or 300 gr. ground  almonds, pinch ground cinnamon, pinch ground cloves, 2 Table spoons of lemon juice and if you have Kirschwasser or Rum for taste.
Add everything together, put it in a greased round 9" baking pan and bake it for 45 minutes at 375 F.

P.S: I've added some marzipan carrots as decoration. When I figured out how to make those I'll write a recipe about those. What looks nice is if you put some powdered sugar on top.
As you can see it was so good a piece is already gone before I could take the picture.

Easy roasted chicken with Lemon, Orange and Garlic

Ingredients

  • 1 (5 to 6-pound) whole roasting chicken, neck and giblets discarded
  • Salt and freshly ground black pepper
  • 1 orange, quartered
  • 1 lemon, quartered
  • 1 head garlic, halved crosswise, plus 3 garlic cloves, chopped
  • 2 (14-ounce) cans reduced-sodium chicken broth
  • 1/4 cup frozen orange juice concentrate, thawed
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh oregano leaves
  • Kitchen string or butcher twine

Directions

Position the rack in the center of the oven and preheat to 400 degrees F.
Pat the chicken dry and sprinkle the cavity with salt and pepper. Stuff the cavity with the orange, lemon, and garlic halves. Tie the chicken legs together with kitchen string to help hold its shape. Sprinkle the chicken with salt and pepper.
Place a rack in a large roasting pan. Place the chicken, breast side up, on the rack in the pan. Roast the chicken for 1 hour, basting occasionally and adding some chicken broth to the pan, if necessary, to prevent the pan drippings from burning. Whisk the orange juice, lemon juice, oil, oregano, and chopped garlic in a medium bowl to blend. Brush some of the juice mixture over the chicken, after it has baked 1 hour. Continue roasting the chicken until an instant-read meat thermometer inserted into the innermost part of the thigh registers 170 degrees F, basting occasionally with the juice mixture and adding broth to the pan, about 45 minutes longer. Transfer the chicken to a platter. Tent with foil while making the sauce (do not clean the pan).
Place the same roasting pan over medium-low heat. Whisk in any remaining broth and simmer until the sauce is reduced to 1 cup, stirring often, about 3 minutes. Strain into a 2-cup glass measuring cup and discard the solids. Spoon the fat from the top of the sauce. Serve the chicken with the pan sauce.
